All you need is a cup, a greased cake tin and the following:
1 cup of natural yoghurt
3 cups of self-raising flour
2 cups of caster sugar
1 cup of cooking oil
a handful of raisins
I very unceremoniously threw everything in together but for a more graceful process – mix the fat and the sugar together first, then add in the beaten eggs, finally sift in the flour, fold and stir in the handful of raisins.
Cook for about an hour at 180, cool and eat. Preferably with a fat mug of tea. The Sunday rainy February blues will dissipate somewhat.
